What causes the sweetness in monk fruit?

Monk fruit contains natural sugars in the form of fructose and glucose. However, unlike most fruits, fructose and glucose are not what cause the sweetness of monk fruit.

Its sweetness comes from a special antioxidants called mogrosides. During the extraction process, the monkfruit juice is filtered to remove fructose and glucose. As a result, Lakanto® Monkfruit Sweetener only contains mogrosides, and no fructose or glucose.

Why are there other ingredients in Lakanto® Monkfruit Sweetener?

The sweetness level of mogroside concentrate is about 300 times that of sugar, so only a small amount of mogroside concentrate is sufficient for sweetening food. This is why many producers of monk fruit sweeteners mix other ingredients with the mogroside concentrate, to reduce the sweetness of the finished product. One such added ingredient is erythritol, a sugar alcohol found naturally in some fruit and vegetables. We recommend that you read the sweetness level instructions on the package carefully before purchase.
